Ingredients
  

  • 1 3/4 cups graham cracker crumbs
  • 1/3 cup coconut oil
  • 1 1/4 cups sugar substitute
  • 3 8 oz packages cream cheese
  • 2 tsp vanilla extract
  • 3 Eggs

Instructions
 

  • Heat oven to 350°F.
  • Mix graham crumbs, coconut oil, and ¼ cup sugar substitute. Press into bottom of 9” springform pan.
  • Beat cream cheese and remaining sugar until smooth. Add vanilla.
  • Add eggs one at a time, mixing until just blended.
  • Pour into pan. Bake 1 hour or until center is almost set.
  • Cool, then refrigerate for 4+ hours before serving.
