- 1 Stand Mixer
- 1 Springform pan
Ingredients
- 1 3/4 cups graham cracker crumbs
- 1/3 cup coconut oil
- 1 1/4 cups sugar substitute
- 3 8 oz packages cream cheese
- 2 tsp vanilla extract
- 3 Eggs
Instructions
- Heat oven to 350°F.
- Mix graham crumbs, coconut oil, and ¼ cup sugar substitute. Press into bottom of 9” springform pan.
- Beat cream cheese and remaining sugar until smooth. Add vanilla.
- Add eggs one at a time, mixing until just blended.
- Pour into pan. Bake 1 hour or until center is almost set.
- Cool, then refrigerate for 4+ hours before serving.
